Warm or Chilled: A Delicious and Versatile Winter Chickpea Salad

This winter chickpea salad is perfect for weekday lunches or as a side dish with dinner. It's packed with delicious flavors and textures, including smoked provolone, crispy salami, roasted vegetables and chickpeas, all drizzled in a tangy shallot vinaigrette. This bowl contains a variety of ingredients, including 1 medium finely chopped onion, 1 cup chickpeas (white, raw chana, or dried black kala chana), 2 – 3 tablespoons chopped coriander leaves, 1 heaped teaspoon ground coriander, 1 teaspoon grated ginger, 1 teaspoon ground ginger, 1 teaspoon ground cumin, 1/3 teaspoon carom seeds, 2 cloves garlic, ½ teaspoon ground turmeric, 2 tablespoons neutral oil, and 1 finely chopped large tomato.[1]

The chickpea salad can be enjoyed on its own, or served over a salad, in lettuce or endive cups, or topped with a pita and hummus. It can also be served alongside a main dish.[1] This dish is incredibly versatile and nutritious, making it an easy and delicious meal for any time of day. To make this curry, simply heat 2 tablespoons of oil in a pan and add the chopped onion, chickpeas, coriander, ginger, cumin, carom seeds, garlic, and turmeric.
